Restaurant PM2.5

What started as a class project turned into an important topic for research.

Motivation

To put myself through college, I have worked at a line cook at many restaurants. One thing I noticed was that while hood vents remove harmful pollutants from a building while cooking, if you are standing above a pan, directly in the path of removal, you are still being directly exposed to harmful pollutants

Methods

I used a PLANTOWER PM2.5 sensor attached to a Arduino Adafruit feather with a built in SD card. I put the device in a 3D printed case and wore it on my chest to work. It sampled and recorded the PM2.5 concentration every minute

Findings

Line cooks are exposed to dangerous levels of PM2.5 and hood ventilation is not sufficient protection. Line cooks should wear PPE to ensure their lung health and longevity of life.
